We had another great evening at Cinzia’s supperclub in Fulham! First everyone enjoyed a glass of prosecco with crostinis. Cinzia made three kinds. The finocchiona mousse crostinis are made with the namesake Floretine salami, which is flavoured with fennel. We also had the classic crostini Toscani, a homemade chicken liver pate. Finally we had warm olive and oregano crostinis.
After, we had the marzolino cheese, described in my last post, with fresh bacelli or fava beans.
Next we has a primo of tagliatelle with a “sugo bianco” or white sauce, which is made of veal, chicken, rabbit and robiolo cheese, which is a creamy white fresh cheese. I think that the “white” refers to the meat rather than the sauce, as the cheese is quite subtle.
The secondo or meat course was parcels of veal, stuffed with mortadella and baby artichokes. The parcels are browned in olive oil, and then slow cooked in milk. This was served with an artichoke contorno and black eyed peas. For tonight’s version of the menu Cinzia is making some butter-herbed fennel as we ran out of the artichokes she’d brought in her suitcase and we couldn’t find any in the shops or markets in London…
Finally the dessert was the Frittelle di riso di San Giuseppe, or Saint Joseph’s rice fritters, traditionally served for 19th March, Father’s Day in Italy. These are a kind of sweet risotto that is then fried, and rolled in sugar. We served the frittelle with vin santo, a late harvest Tuscan wine, and a fresh fruit platter.
We had a great time and I think our guests enjoyed it too! They were delightful, and everyone got to try a little something that they hadn’t had before.
